Our Local Table is dedicated to telling the stories of the farmers and makers who shape Southern Illinois foodways. Each episode begins in the field, sometimes literally, highlighting the people behind our food culture. Hosts Niki Davis and Stephanie Rhodes then settle into the kitchen to share approachable recipes made with regional ingredients. We hope you’re inspired to try something new. Meet the Hosts
Niki Davis
A sixth-generation Southern Illinoisan, Niki knows the region well. She was raised by storytellers who instilled in her a love for the land and its people, and home cooks who taught her the importance of cooking with the seasons. As a food writer and recipe developer, Niki enjoys creating dishes that highlight local ingredients while exploring regional foodways.
Stephanie Rhodes
Raised in Southern Illinois, Stephanie has spent her career as a rural community advocate and educator. With a background rooted in agriculture communications, non-profit advocacy, and rural tourism, she brings a deep love for local growers, global flavors, and community food systems to everything she does. When she isn’t in the classroom or enjoying life out on her farm, you’ll find her in the kitchen recreating travel memories and experimenting with fresh farmers’ market finds.
